Figuring age

How can you determine age of chicks and hens and how do you tell the sex?

I can really only do from day old to when they are fully feathered and I do it from my experience of having chicks. It is extremely hard to tell how old a hen is though. If you post a picture I can try and help you guess their gender.

they look like they are 4 or 5 weeks old, so far they look like pullets.

BR pullets. They are fairly easy to sex due to color differences in male/female of barred breeds. Cuckoo Marans and Dominiques are the same way.
