Finally did the butcher

Hi Wyo, I didn't think anybody would read that whole thing. LOL
when everything is removed, then lay the chicken on it's back.
cut the loose skin/meat in a U shape down around the poop hole.
sometimes I use the scissors to cut along the ribs all the way around from spine to spine. then break the back bone and remove the innards.
I like to get a grip on the gizzard.
you might have to loosen the crop in order to pull it into the chicken's cavity. the wind pipe has to be pulled out too. sometimes it doesn't come out with the innards. It should be connected to the lungs, but not always.
