Finishing Meaties with Liquor

Maybe its just to be nice! YOu know, a little buzz and farewell party to see them off.

I have read to add alcohol to the water the morning of so as to help them be more calm through the whole process.

I add beer in the last week to my secret "meaty finishing mash"

, not sure about the whiskey, but i got the idea from an old and I mean 1700's old "fattening" method i read about. The claim is the bird eats then gets sleepy from the booze and a sleeping bird isn't burning up the energy in its food so it pumps up. I've only done meaties one year so I cant say what the difference is but i knew a pig farmer who said he finished hogs with beer.

I inbibe in a bottle or two of beer during processing 25 campers then finish off with a hot shower and then a mint julep or hot buttered rum, depending on the season.

Yeah, I sometimes finish chickens with brandy.

Brown your chicken and when it is done, deglaze the pan with a bit of brandy. Add a couple of Tablespoons of heavy cream and pour the sauce over the chicken.
 
Martha Stewart once talked about "finishing" turkeys with bourbon. Could be done, I guess, but there is a much better used for that liquor.
