first time eating quail... tastes like... chicken ;)

Heya all, I've seen folks on here asking what quail tastes like, so figured to throw in my experience.

I had a rowdy A&M that I took out of the gene pool, he was young, so smallish, but I figured it'd be a good practice butcher for me.

I cut off the wings and feet then skinned it, then cleaned it out well inside. Put it into a baggie in the fridge, no brine at all, just the bird in a bag, and left it overnight.

Next day (today) I wrapped it in a piece of bacon, no other seasonings, just the bacon, and threw it on the grill. Cooked it for about 20-30 minutes (wasn't timing it, but I smoked a couple cigarettes, so I figure the time is pretty accurate

I served it with a fresh tomato sliced with salt and pepper on it, and then dug in...

It was good, very tender, I was surprized how much breast meat there was by ratio to bird size. This bird was very young, maybe 5 weeks old - so way younger than normal butcher age. I am interested in trying a full grown bird next time.

It tasted like chicken thighs - not as strong of a chicken dark meat flavor, it was very mild, but good - not too exotic, familiar enough that I can perhaps talk my family into eating it.

Now, I just need to find a bigger bird MMMM

haha yep just like anything it's a "just like chicken" sorta thing though what is wonderful about quail is it takes on flavors very well better than other meats. I asked my aunt who is a cook about this and she said it's because thier meat is so thin that it's able to absorb and keep the flavors instead of just being in teh first few layers

I cant wait to try it mine are just 2 weeks old so I have a few more weeks but boy is my mouth watering right now thinking about it. I have never eaten quail and I can hardly wait!!

Of course I've only ever had wild quail, but I have a 3 week old batch of Coturnix right now and the extras boys will become dinner. We'll see how they compare.

I love asparagus - especially grilled - hubby prefers his boiled lightly, so I usually end up doing it both ways
