Flies while processing chickens

Do those of you who process your chickens during the summer months have a problem with flies while processing and if so, what do you do about them. We normally don't have any flies around, but, once in a while we'll see a few. We are going to be processing a 6 old hens in a couple of weeks and don't want flies around while working with the birds and meat. thanks.
 
Yes, it's horrific. The flies I actually don't mind so much, but if you have meat bees in the area, they will swarm you. Ever tried to enjoy an outdoor barbeque only to be enveloped by a swarm of these monsters, all vying for your burger? Well, it's 1000x worse when they smell fresh blood. I've been stung/bitten many times by them, because I dared to touch the carcass they were so hungrily attempting to devour.

I've found that netted tents are a great solution. Basically EZ-Ups with netting down all the sides, like people take camping. They cost like $200 at Costo or Walmart for a decent one, but they are worth every penny. I loved mine, but it in particular was a pretty crappy model, so when fall set in, the heavy winds snapped the legs real quick.
