I've noticed that at least one, possibly 2 hens have started making a coughing type sound. It doesn't happen very ofte, no discharge from eyes or around nose/beak. Nothing new in diet or environment. Environmental allergens up in central Texas, could this be the reason?

Dusty conditions, dust in feed, high ammonia levels, not enough coop ventilation, high temperatures inside the coop, and mold can all promote respiratory problems. I'm not not sure about coughing, but sneezing can be common with those. Here is a good link to read about common poultry diseases: http://edis.ifas.ufl.edu/ps044

Dust & overall heat perhaps, as it's been like a desert here. Temps over100° everyday. Coop is clean & well ventilated - their large pen is clean as well. They have lots of shade, clean water, sand bath, water "bath" & they easyH & H pellets (not dusty).
Ammonia-as in excessive urine exposure? Or something else??
