Greetings everyone. I'm Deborah and a publisher of a local community newsletter and a friend and I have started a Life Challenge to get back into shape and start looking at what it is we're really eating these days because of the 'microwave'! Anyway, I'm doing a TON of research because I'm trying to get back to the basics of food, having been raised on a farm, with fresh eggs, and fresh everything else! I'm not on the farm any longer so finding FRESH anything in the concrete jungle isn't easy!

Let me get to my first question... I bought this morning, my first fresh off the farm dozen eggs!! Yipee! Much richer in flavor but I found a couple of oddities and am hoping someone can help me figure it out.

What I found is very thin shells... which all the research has suggested that farm fresh eggs should have stronger shells than those in a grocery market.

Also, I found the whites VERY watery... which I've always heard that fresh eggs should be strong in integrity with both the yolk and the whites able to keep their form quite well.

The farm that I bought these from says they were today's lay... so that means fresh to me... What would you all say to the thin shells and watery whites?

from S. Florida! Its great to have you here with us! Now, the shell thing, sounds as though they aren't getting enough calcium in their diet? The thing about the "whites", not to sure about them. I'm certain someone will pipe up with an answer for you soon. Any way, its good to see you going the more natural way! Isn't it great? Enjoy!!

Thanks for the welcome. And yes, I'm enjoying getting back to the basics! I lost 6 lbs my first month and the ONLY thing I was doing was eating organic, grass-fed, wild, drug free food... AND I've stop loosing a ton of hair! I would have to scoop out hair every time I showered and within the last couple of weeks, I've only had to clean the drain one time and it wasn't really necessary... I just did it to see how much was there. So I'm a believer that food from our grocers is slowly poisoning us. I've even gone organic with my facial cleanser as well as moisturizers! It's totally AMAZING at how much my skin has changed!

I'm not going vegan or even vegetarian, and I'm not going totally raw food... but I'm pulling in as much 'real' food as possible.

How far south are you in Florida?? And how much 'raw' food do you consume?

What part of Florida are you in? There's plenty of Floridians to be found around here.

Now, as for the thin shells and watery whites there are several possible reasons this can be so we'd have to know more to be able to speculate. None of them however lessen the nutritional value of the egg.

Alan, I'm afraid I don't have more information... outside of the description I gave. I heard YEARS ago that you can tell the 'freshness' of an egg by the level of firmness in the whites. When I cracked open these two eggs, the whites had about 10% firmness with the remaining white thin enough to slip through my fingers if I had put them in my hand. Very thin.
