You can hatch them out of the fridge sometimes if they don't stay in too long. I have hatched an egg out of the fridge just as an experiment and I have read where others did also.

To incubate eggs, most of us set our incubators to 99-100 degrees. Is it that hot in your house? I would think any temperature that would be comfortable for us to live in would be cool enough to keep eggs until you get ready to hatch them.

here in Texas I could not go without ac! we are beating out Arizona in temp! I do however think that at these 100 degree temps it would be possible to just leave the egg outside to hatch! lol!

(this may sound stupid but) if you have the rooster in with the hens you can still sell the eggs for food? Is there any way of making sure your customers won't end up eating baby chicks by accident? I had thought that's why you'd candle them, but the more I read the more it seems like candling is only used to track eggs for hatching.

As long as you collect your eggs every day they won't start developing. There are no baby chicks until either a hen starts setting on them or you put them in an incubator.

I sell and eat my fertile eggs all the time. No partially developed chicks. The eggs have to be kept around 99 degrees, and have a higher humidity than is probably in your home. They are not going to develop just sitting on your counter. It is probably a good idea to keep them refrigerated if you live in a hot climate without ac, just to help keep them fresh until you use or sell them.
