There's a discussion on the Organic Chickens listserv and we're all wondering if there's any diminishment to taste or nutrition or the consistency of the eggs change in any way if they froze up in the coop. Can they still be sold or should they be tossed?
 
The only thing that I have noticed is that generally frozen eggs cracks allowing the possibility of bacterial contamination. Because of this possibility, I have generally used them shortly after collecting. I have never noticed any change in taste. As to changes in nutritive value? Can't see a logical reason for that.
 
Eggs frozen then thawed can have thicker yolks.
