Depends what you want and depends on the species. Some like the mountain quail usually never have week old chicks for sale while the valleys may have eggs, chicks, and adult/juvenile birds. Wild quail season (juvenile/adult birds) is roughly about now to January. Their eggs are roughly from April through early July. For week-old chicks, very few people sell them but they usually follow the egg spring season. If you're looking for chicks, you'll have to wait until next year because these quail are not like domesticated quail that can lay year-round. They only lay in the spring. If I were in your situation, I would just get adult female birds to pair up with your males so that they can begin laying eggs next spring. Anyway, check out CM Gamebird Farm.
