With any breed, there is a written breed standard. We can all read the standard, and folks with a general knowledge of rabbits can understand what it means, but there are often things that somehow don't translate into the written word very well; things that the long-time breeders know (and are often quite willing to pass along, believe it or not).
There are a lot of different genes that are involved in rabbit coat color, and it is the combined effect of all of them that creates the color of a particular rabbit.
The Flemish Giant only has -what - 8 accepted colors? Among those colors, there are some that, when bred together, will give you babies that are showable colors. But there are also combinations that can result in babies that are some other color that isn't showable, or perhaps a poor representation of a color that is showable. And of course, though color is often the fun part, there is a lot more to a rabbit than just color. That's where the mentors would come in - helping you to know what colors you can breed together and still get good colors, and what other things besides color to look for when choosing animals for breeding.
