goose egg question

this has probably been addressed already but I am a new goose owner and have a question about the eggs...never ate a goose egg...one of the girls is laying, I have two ginormous eggs in the frig and wonder what they taste like...broke the first one I got a week or so ago as she dropped it on the concrete and it was cracked...the yolk seemed really thick...I scramble it with a bunch of chicken eggs for my puppies being not brave enough to taste it...these are the Brown Chinese I got for my birthday earlier in the month...I was surprised that the girls are laying after having been moved...they have it pretty cushy here compared to where they came from...they are happy campers...but what about the eggs?
 
As you noticed they are thicker (& taste richer) than chicken's eggs. Just like duck eggs they are superior to bake with. You can eat them and my little girl thinks its cute to make daddy a three egg omelet with a goose egg in it.

The proteins are a little different than chicken egg so you need to cook them at a slightly lower temperature than chicken eggs if you are planning to fry them or make an omelet. Unless your birds are eating something odd (wild leeks & garlic chives etc...) you should not really notice a difference in the taste of the eggs. Enjoy your bounty!
 
thanks for the response shadyglade...I have two goose eggs and they are on the menu for tomorrow...omlet! I have a friend with a 'bator and after this week I am going to be saving the eggs and see if we can hatch a few...love my geese...they are my favs...
