gotta cull, have to make brine..

I have to cull a few chickens, I know I have to soak the chicken in brine overnite, I just don't know how to make it, can someone tell me how to make brine, any help will help, thanks!

basic recipe:
1 gallon water
1 cup salt
1/2 cup sugar


add the spices, flavors, etc., you want.

I use citrus slices, molasses, bay leaves, and herbs de provence.
