Had 2 now i have 1. how to add?

I previously owned 3 black Australorp's. they were my first chickens 5 years ago. One died after a year, not sure why the other two lived anther 4 years or more and then recently died within a few months. One was attached by a hawk and she didn't make it. before the last one past I picked up to Easter Egger pullets. They all got along well for a few weeks but my older Australorp struggled one day when it was 116 degrees. Coop has shade, a fan, and i leave ice blocks but she couldn't stand up that day. I brought her inside and cooled her down she seemed to recover and i left her inside that night but in the morning she was dead. my two EE had been find it's actually been a milder summer in AZ but one bird seemed to be growing a bit slower even though i saw her eat and drink and she wasn't pecked. then two weeks ago i came out and she was dead. Fearing disease i've just had the one EE for two weeks but she's been fine no issue at all. so I want to add a bird or birds. I can fit three birds with good space four would be crowded a bit. Could i get just one pullet? or should i get two? I'm afraid if i get two they might gang up on the one current EE. Any breed type recommend that are more docile it i can't find another EE pullet?
 
That's really sad. I'm sorry you've just been left with the one girl. You could try just adding one more, but that runs the risk of ending up with one again. I'd go for 2 or 3. Your EE will have home field advantage. Of course, the most docile breeds tend to be large and/or fluffy: Buff Orpingtons, Brahmas, Cochins. You also might have luck on a Facebook chicken exchange. A lot of times, people are trying to rehome their most docile birds because they're getting picked on.
 
Personally, if i lived in hot climate i would get white leghorn or another white breed.
They don't struggle with heat so much and are good dependable layers and do have friendly personalities if hand raised.
I would get at least 2.
I can see that, but for what it’s worth, my EE is far less bothered by heat than the Buff Orpington. She is still very lean-bodied, unlike the Buff Orpington and Barred Rock, who are both moving toward chonk status.
