I think that it would be a really fun project to hatch and later release mallard ducks The only problem is that I don't know how I would go about getting them ready to release. How would I do that? Has anyone ever done this before?

I think it's against the law to hatch and release Mallards unless you have some kind of permit, domesticed Mallards that are sold in feed stores and TSC are not to be released, once you begin to feed them and care for them they have no idea how to fend for themselves like their wild Mallard cousins they would end up dead most likely.

I think you could come up with a project by working with a wildlife rehabilitation or local wildlife organization. Find out what kinds of waterfowl you could help with, and then at some point, you may be hatching and releasing waterfowl, but with the backup of knowledgeable folks.
