Hello from Nashville

We plan to do the culling ourselves. We're going with the cone method, although we've never done it before (or any of this). I'm going to do the deed, and my wife has graciously volunteered to do the rest. She's planning to skin them instead of plucking, although I'm really fond of the skin. Then again, she's typically the one cooking...so I'm not complaining. :D
Ben, if you'd like a good instructional video, I'll drop one here for you under a spoiler. Scalding and plucking is not very difficult, but easier if you can hang the bird while plucking.
