Help Troubleshoot Home-Made Incubator

A couple years ago a built a large incubator from a wood crate. It was about 4ft tall and really heavy but it did a great job. I loaned it to a friend. and with all the time on my hands I decided to build a smaller one.

Using a similar idea as the original one (and I wish I could find the original source I built it from) I designed this which fits the egg turner perfectly. I have the thermostat switch in there and it is too small to use the brooding lamps like I did in my old one, I used a reptile bulb. Here are the problems I am running in to:
1- I have four reptile thermometers in there (which I found to be very consistent and reliable in my old incubator with many successful hatches). In this one, I had one that was reading high and the rest were pretty inline with each other. I thought the one reading high was wrong, but when I put them in the Nurture Right 360 I had to buy to get some eggs in and going, the one I though was high, matches the temp of the Nurture Right and the other one is reading two degrees lower. I have to assume that the Nurture Right is accurate (at least I hope it is). So I am not sure of a reliable thermometer to put in the incubator to know the temperature.

2- The switch is not turning back on in a timely manner. There is about a 5-7 degree swing from switch off to switch on. So the temp of the incubator is dropping way too much and that makes me super hesitant to put anything in there. I have tried changing the position of the sensor for the thermostat and even tried turning off the fan, but with no luck. I was thinking of extending the wire on the thermostat and attaching it to the other side so it cools down faster, but other than that, I am not sure what else to try.

You cannot trust an incubator thermometer or a regular thermometer unless you calibrate it.

Never trust a built-in thermometer on an incubator.
