One possibility is that the male is only carrying one copy of the allele for white. That white allele (I) is dominant so he is white. But the chick may have inherited the other allele which could be wild type (i+) and that combined with the female's genetics gave you the coloring of your new chick. I don't know if white cochins are based on dominant white or recessive white or maybe just silver? But in any event the female had "no white" to contribute to the genetic formula.
