Is the gray one a hen or a roo? It’s a sapphire gen have you ever seen any with white spots on it’s head my other ones don’t have them

It's a female. Male SGs are barred.

Female. The white feathers probably mean the bird carries, but doesn't really significantly express, a feather color/patterning gene that your other birds don't have. Would be something that might affect the patterning of any chicks she produces but doesn't really make any difference otherwise.
