I saw some poussin on sale in the local supermarket and I've never tried it before so I thought id grab one.
I think theyre harvested at around 4-6 weeks and just look like a mini supermarket chicken (with the large breasts/thighs).
I'm assuming these must be a meat bird variety that are just harvested earlier?
This got me thinking ... is heritage/dual pupose chicken varieties of poussin a thing? Would they be harvested at the same age (4-6 weeks) and just give a really small quantity of meat? Or is poussin a modern invention only occuring after meat birds were popularised?
