I'm retired and live in Thailand. My wife and I are about to rear turkeys for the table. This is something new for us and, after searching the internet for a good forum on the subject, I stumbled across BackYardChickens and its turkey section. This looks like the best place to ask, learn and, I hope when I gain some experience, pass on any tips that I can to others.

And the best Thai food in Thailand is found in the Isaan region where we live. However, when invited to eat in a village home I always ask about the ingredients in each dish before eating!

Few Thai homes have ovens as we know them. That prompted me to ask how Thais cook turkey on the few occasions that they do so. The local people mince it with a knife and fry it with garlic and chili. I think that this is a shocking waste of good meat! If you Google Images using 'Thai turkey' you will see other culinary crimes. Perhaps I'm stuck in my ways but I'll keep to a good slow roast in our European oven.

It sounds like you might have your work cut out for you if marketing turkeys could involve such a change in habits and cooking facilities.
