Hi. I'm new to all this and had a very bad experience previously. I tried to hatch California Valley Quail eggs last year, but it was a disaster. Only two hatched out of fifteen and they were deformed. They couldn't walk straight and I finally put them out of their misery as they couldn't drink or feed. I tried to follow the directions as best I could, but got variable readings from the hygrometer and the incubator in both humidity and temperature. Help! I need advice.

The number one thing is to learn your incubator.
Make sure You have at least one calibrated thermometer in it and a salt tested humidity gauge.
This means you must purchase a separate thermometer and humidity gauge and you cannot trust the built-in thermometer or temperature reading on your incubator.

Which incubator do you have?
