Holiday Guinea Recipe, anyone?

I'm going to off 3 of these guineas I think may be males and hope the remainder get along with the chickens better.

I'll be doing it later this week. Would anyone happen to have a good recipe for the holidays? They're about 14-15 weeks old and I'm considering roasting a few for Christmas Brunch.

I have been told that chicken can be substituted with guinea fowl in most recipes but i found this sight:

Would anyone here happen to have a tried and true recipe? I thought about sticking them in an oven bag and roasting them with apples, celery, onions, some stock and seasoning.
