Yes, research it, there are several recipes out there. I tried making it with an immersion blender and I finally had some luck, the size of the the egg seems critical. Once I weighed the eggs I was using the recipes were more successful. Using a large egg, 2.0 - 2.5 oz was the best.
 
this is what I have always done . . . it might be wrong but I learned it from someone from France.

put your egg yolks in blender/processor and add whatever seasoning you like I use a small amount of garlic, a little lemon juice and salt. my friend always used tarragon

whir the yolks and while doing so dizzle good olive oil throught the hole on top until the thickness you like.
 
I have the Culinary Arts Institute Encyclopedic Cookbook (this one is from the 50s) but they still have it in print. Great cook book. It has a listing for 17 different flavor mayonnaise.

The basic is

2 teaspoons salt
1 teaspoon dry mustard
Dash cayenne
2 egg yolks
1 pint olive or salad oil
1/4 cup cider and tarragon vinegar, in equal parts

Combine dry ingredients with unbeaten yolks in a mixing bowl and beat together until stiff.
Add part of the oil, beating it into the mixture drop by drop at first, then proceeding more rapidly always keeping the mixture stiff. When it begins to thicken add a little of the vinegar: alternate the oil and vinegar until blended.
Makes 2 1/2 cups.

Thank you very much. I am going to give this a try. Now I have another use for my eggs. This will save me money also.
 
Have you ever tried a homemade egg drop soup? I usually make mine with chicken stock, spiced to taste, add some green onion if you like. beat your eggs in a bowl and set aside. I cook the frozen tortellini in the stock. then remove them. with stock at a good boil and using a big cooks spoon to whirl the stock like a whirlpool constantly while slowly drizzling the beaten egg mixture into the whirling stock. Whirl for about 1 minute more, add the tortellini back in and its done.
I have also made it with stock made from boiling down neck bones, they are cheap and make good stock. I usually pick what little meat there is off the bone and add it to the pot too.
You don't have to add the tortellini but hubby likes it. Make a great energy food and fast.
