You can crack some of the eggs from your hens and see what ratio are fertile. That might give you an average of what will be viable.
The only other way is to wait until some days into incubation and candle.

If you have no rooster that is actively mating with his hens, then they are most likely not fertile, if you do have one they are probably all fertile.

If you are trying to hatch your own eggs without a mature rooster, it will not work, when a rooster begins actively mating they are almost certainly fertile.
