How do you keep track of older hens that may stop laying?

I have to ask because tagging my chickens was never even something I thought about....

Are there no physical signs or natural a chicken is getting older?

Only up to a point. It's not like being able to look at a horse's teeth and tell age by how much they have separated. Breed has a bit to do with it too, different basic body shapes. As they mature most chickens' bodies thicken. They keep growing. But usually by less than two years old, sometime much less, that is done. It can be difficult to tell by looking how old a mature chicken is.
