How does a swap meet work?

I'm new to all of this; I want to get rid of some of my chickens and ducks, but I would like to show a pair of my Silver Appleyard (large) ducks.

The thing I'm going to is a Poultry show and swap meet.

I was wondering if I should get there like three hours early or whatever, because I've heard stories of how they opened the barn/arena two hours before the scheduled time and all of the 'good' birds were gone, but I've only been to the poultry barn at the fair, so I have NO IDEA how any of this works.

I need to bring my show birds in a cage, obviously, but is there anything special I should do? Bring food and water cups, right?

Make sure and quarantine anything I bring back, including my birds, because of anything they may have been exposed to, and make sure they look their best (even though my drake's head is still spotty from his molt, and the drake and hen both have rather small flight feathers, which are still coming in?). Would this be a bad time to show them? The ONLY Appleyards at the fair were scraggly looking, and much smaller than my own.

But what I want to know is, how does the swapping part work? Do you just say "Yeah I'll trade six chickens for three ducks" or what? All I have are some red stars/sex links.

Help! o_o;

Do I have to bring my own table too?

Wow, this just gets more complicated!

Basically there's not much swapping as there is buying and selling.
Sorta like a flea market for animals.
