How far into incubation would you eat an egg?

I had a migraine for two days and didn't gather eggs. I have a couple of cochins who I can't seem to break of brooding so... I went out today to find them sitting on 45 eggs. Would you still eat them after 2 days of being under hot mamas?

I'll eat the ones with the sort of spread-out bullseyes, but not with a noticeable chick started.

2 days shouldn't be a problem -- but refrigerate them and eat them first.
