I’m thinking about raising a few meat birds this year and am wondering how high the Cornish crosses can jump. I am thinking of raising them in my garden area that will have 2’ high raised beds and if it would be possible to have them in there with light worrying about fencing each bed.

I had really determined meat birds and one of them was somehow able to jump over a 3-foot gate but they weren't very heavy meat birds they were maybe 7lbs at 6months old

As cornish' mass increases, lift decreases "substantially". Mine were feed limited and free ranging, they did alright - not great - but alright as jumpers till somewhere between six and seven pounds.

I've only one left, guessing she weighs 10 or 11#, and she can do a wing assisted skim when you scare her enough. No lift at all. That said, she's big enough to waddle up and stick her head over a 2' raised bed. Guessing she could probably nibble at anything within at least 8" of the edge, maybe more - though I'm a bad judge of such things.
