How Long beyond 21 Days should eggs go?

OK - we did it!!! We had 7 eggs under my broody jersey giant. 21 days from day one we hatched. 2 hatched on Saturday 8/14/10 and 1 on Sunday 8/15/10. How long do I go before disposing of the remaining 4 eggs? The hen is still very protective over the unhatched eggs and is also doing a great job of taking care of her new little ones. Should we wait another 3-4 days before disposing of the 4 remaining eggs? I'm pretty darn sure they are all aged the same as I marked them on day 1 to make sure others were not intermingled in the nesting box (tip from backyard chicken - super helpful for this first timer!). Thoughts, wait or toss?

I would wait until day 26 or the broody hen leaves the nest, which ever is soonest,
