I have a hen that is broody for about two weeks now. If I put eggs under her now will she go for another 21 days?

They are living animals. You can't guarantee what they will do. And they can't count. She may break from being broody tomorrow. But most will stay broody and on the nest for longer than five weeks. If I were in your situation, I'd give her eggs and fully expect her to hatch them and raise the chicks.
