how long do you leave your meat fresh before freezing it?

I just butchered my birds sunday and its now Friday I put a bunch in the freezer monday but still have a few shrink wrapped in the fridge I was planning on selling them to some friends tonight but I really don't know if their going to be ok long.. I think im just going to sell them the frozen ones but for future batches.. whats the best method?

I leave them in the fridge (or in a cooler with ice water if I'm out of space) for about 3 days -- until rigor mortis passes and they become floppy again. Then I shrink-bag them and put them in the freezer.

I would give your friend the ones that were frozen on Monday, just to be safe.

What temperature is your refrigerator holding? It's really important to make sure it's 40F or below, especially when raw meat is involved -- triply so if you are selling it to other people. I use this alarm thermometer to keep an eye on mine. There's another one that just has one probe, for a separate freezer.
