How long does a fertilized egg last before it needs to be incubated?

Hi there, just wondering how long I can collect fertilized eggs while waiting for a hen to go broody.

We keep ours for 14 days without any problem. However, we keep them in an old wine cooler, now labeled the egg cooler, at 55 degrees and turn 3x daily.

By the way, make sure they are brought back to room temperature before placing under a broody hen.
