How long is the meat fresh?

My birds are being processed on Wednesday, We're having a party on Sunday. will the meat be okay in the fridge that long? or do I have to freeze it on Friday and start thawing on saturday? I'm seeing that it's fresh for 1-2 days.... that sounds annoyingly short to me.

Look around the processing threads, most advise letting your birds "rest" in the fridge about three days to age. Your birds would be ready to eat or freeze on Sunday.
