How much meat is really there?

How much meat is there on any given rooster? Say it weighs 10 pounds, what would it dress out to be?

I think it is around 2/3rds for Cornish x's. Dual purpose birds I would assume is closer to 1/2.

It's about the same for the roosters too. The offal pretty much weighs the same.

So your looking at about 70%. A ten pound rooster will give you a 6-7 lb whole chicken.
