how long can you keep an egg before incubating and it still be good? some i have will be a week old before i start incubating.

A week is fine!!
1 week is fine. My fertility goes downward after 2 weeks to practically 0 fertile by 3 weeks.
10-12 days kept under very cool conditions. That's about it.
