How to rest meat in large amounts?

wow Dan the garbage can thing is a great idea - thanks for pitching that in.

Thats what my friend uses, big garbage cans full of water and ice.
She's been doing it that way for years without a problem.

I dislike the mushy, soggy quality of the grocery store chickens (finding one that isn't "enhanced" is nearly impossible anymore), and can't quite get my mind around the idea of deliberately doing that to homegrown chicken.

I second that. I just had my first 'farm chicken' several months ago and it was wonderful. I did not know what I was really missing.
BTW my kids have NEVER like Micky D's chicken nuggets. They want the real thing or no chicken at all.
