How to train small dogs to herd chickens??

You need to be a rooster to herd hens and even then you'll be tearing your feathers out over some of the more subborn ones.
You could of course try to teach the dog how to hackle flash which the rooster uses for the particulalry stubborn hens.

I had aussies and they'd try to herd everything. Chickens won't play that game. Now ducks are great at being herded.

Yep, ducks are often used in herding trials because they are cheaper and easier to deal with than sheep.
