Humidity spiked to 81%

My first time incubating Buff Orphington chicks. I’m using a Hovabator 2370 which has a fan. Humidity spiked from 71% to 81% during hatching. today is day 20 within 2 hours of hatching it went up.
2 just hatched out of 25 eggs. Is it ok to take the red plug off to lower humidity? Temp is 100 degrees.

Are any plugs out? Do they have quite a bit of ventilation? The humidity is fine. I've had it spike up to 90s while hatching. Its totally natural. It'll go back down.
 
Just the one red plug I took off. Should I put the red plug back in?
