So again, this is my first hatch in an incubator. 2 have hatched out today and a few more have pipped. When the 2 came out of the shell, my humidity spiked up to 75. It was steady on 65 until they hatched. Now it is staying on about 70 and I am afraid that is too high. Even if it isn't, when the next chick hatched, it is going to spike again. What do you do in that situation?

Nothing....
It will spike a bit with each hatch until it reaches a maximum point.
When I hatch my Georgia giants hatched it went from 70 to 80 and stayed there with 72 eggs hatching.
With my jumbo brown quail, it went from 60 to 70 and that's where it stayed the whole hatch.

Make sure all your vents are open though, if you haven't done that already.
