I hear you on the done with cooking thing. I cook 90% of our meals. It gets old real quick.

Rubio's is one of the few take-out places I frequent, too. So yummy! And the "Taco Tuesdays" deal makes it a steal.

I remember, a few decades ago, I was taking a four-day class to be a certified sailing instructor through the national organization that governs the sport of sailing. Since so few of these classes were offered, young people came from all over the US to take the class in So Cal. There was a girl in my class who was from Kansas.

All us So Cal sailors were familiar with fish tacos, mostly from visiting Baja (the home of fish tacos), because Rubio's was fairly new then, even in So Cal. This girl from Kansas had never heard of using fish in tacos. How gross and yucky is that! So after class one day we took her to Rubio's. One bite was all it took to convince her that the best tacos were fish tacos! I hope fish tacos are mainstream enough now that my former classmate could get them even in Kansas.
