I finally cooked our chicken (it was a 15 week old EE) and boy were you guys right.
He was delicious! After I processed him we let him sit in the fridge for a day and then he's been in the freezer for two weeks. He was very tender, I cooked him as a whole chicken in a roasting pan in the oven. wow, I'm ready to do this again, well maybe not the processing part, but eating my own poultry!
I use tenderizer on all my meat and then added some chicken rub. Oh, I always brush on oil over birds when I cook them whole and I add water to the bottom of the pan and cover it. Keeps the meat very juicy. He was yummy!!
