So like what is your hen and what is the rooster? I thought you wanted to know what breed they are not what sex they are. About some breeds at three weeks you can tell the cockerels will start with the comb developing a lot faster than the pullets(but not always.)
 
If their mother and father are both one breed, the chicks are the same breed.

If the mother and father are two different breeds, the chicks are a mix.
If the parents are mixes instead of pure breeds, the chicks are also a mix.

the mother is an Austra White but the rooster’s breed I’m not sure of

I just wanted to know the name of the breed if they were mixed, but I think they are just mixed breed
