Im looking at getting a few orptingtons, sussex, or wyndottes... maybe all three?

Never had a mixed flock. My ocd doesn't know if I can handle that.
 
With a mixed flock, each hen can have her own name and you can tell them apart. A lot like people, they are individuals. Good luck!

I literally have all of the breeds you've listed here, and I love it! Each breed has pros and cons, and I've found that it makes for a well rounded flock (assuming you're okay with the mixes that will result if you keep a rooster).
 
Sussex have a very nice temperament. They are curious and docile. They are quite beautiful when seen in the sunshine. Mine are quiet talkers and responsive to me when I call them.
Mine are loud. 😂 They're super smart, though. I can go outside and yell, "Where's <insert name>?" And she'll come running and yelling. Our Speckled Sussex hens are the sweetest. We didn't have good luck with the roosters, though - they were mean and went to freezer camp.
