Monday, February 10 so the 21 days were up yesterday, Monday March 3. Congratulations on the 7 that did hatch. How long has it been since they hatched?
Hatching is not that exact. They can hatch early or late. I've had some hatches in an incubator and under a broody hen where all of the eggs that are going to hatch have hatched within 16 hours of the first one hatching. I've had some that drug out well over 48 hours between the first and the last.
One incubator hatch I had one egg hatch late in the day, on Day 20. Nothing happened until late the nest day when I saw a couple of pips just before I went to bed. When I woke up the next morning I had 16 more chicks hatched and that hatch was over.
One broody hen hatched a chick late on a Monday. I don't know when her others hatched but she did not bring them off of the nest until early Friday morning, 80 hours later. I was starting to get concerned but they were all fine.
If things are normal, they absorb the yolk before they hatch and can live off of that yolk for 72 hours or more without eating and drinking. In your situation I'd wait at least 48 hours after the first one hatched before I'd feel any pressure to remove any.
Candling is not going to help them hatch. In my opinion, opening the incubator and candling is creating an opportunity for something to go wrong. If I see something going on inside the incubator that I need to fix, I fix it. But I do not see my impatience or curiosity to be a reason to take that chance.
