Insulation and a tips on a newbie builder.

I live in Maine and my family is going to build a new coop for my chickens. The temperature can reach 20 below and even lower (Fahrenheit). Should I use insulation? We don't use heat lamps and my chickens really need the extra warmth. If I do add some, how much should I add and how do I apply it? I have never built anything before but my dad is a mechanic and a builder and he is going to help me out. Any tips or advice for this newbie?
 
One thing to consider, insulation between inner and outer wall is a rodents dream. They love it.

If your coop has plenty of venting up high, and no drafts, they will be fine. A partially covered run, top and sides will give them room to roam in the winter. Mine hate snow. If the part of my run that's open has more than a 1/2" of snow, they won't go near it.

Ok, thank you, this is really helpful.
Also, my chickens love snow, they would pick snow over water any day.
