Jersey Giant not happy

We've had our Jersey Giant, Allegro, since she was about a week old. We have handled our chicks daily, although she didn't get picked up AS much as the others, she was still handled and petted and picked up. She is now about 5 weeks old, bigger than almost all the others (as we expected) and squawks at us when we handle her. We let her and a couple of others run around the kitchen for a few minutes today and she squatted down once like in the picture, but it seems more defensive than submissive, and she was not making happy sounds.

I almost had wondered if she was a cockerel but she has absolutely no wattle and comb and I'm not sure when Giants get theirs. I wanted to try to make her happier here, but maybe she's just one of those chickens who wants to be left alone and isn't necessarily unhappy, just...doesn't want to be handled or touched

As prey animals some chickens have a stronger survival instinct than others and don't like being grabbed/held especially when approached from above.
