There are some USDA guidelines but are doubt they are that long. I recently purchased a place with a 2500 hen layer flock. It is leased out until this summer when I take possession. The eggs are picked up by the distributor once a week and even with that small flock (by commercial standards) it is over 1000 dozen eggs a week. That is just from one small operation. Add to that dozens and dozens of farms serviced by the packing and distribution facility and they sort, wash, and pack 10's of thousands dozen eggs a week. They continually move them to market to fill demand.
