Keeping fowl under the radar?

Hello BYC! New member here. I live in Miami, FL and where I live, I can't have poultry on my property since I am not rural. I am still deciding wether to keep chickens, ducks, or geese but once I pick one, I would need to keep it hidden from the county. Any tips/suggestions on how to keep my birds away from prying eyes? I have a 6ft wood privacy fence all the way around my property. I was thinking of planting clumping (non-invasive) bamboo to screen by birds from view and to keep the, from jumping over the fence. Thoughts?

My neighbor to the right is totally okay with this. I still haven't met my neighbors to the left or behind. I think the guy behind me is an animal lover since he has two dogs, a fish pond, a tortoise, and a cockatoo. I have a feeling he will aslo be on board.
 
Hens are not as quiet as you might think. They are easily as loud as roosters, but they generally don't sustain much. The point being that at least three neighbors in each direction and across the street and behind you will easily hear your hens cawing, baw-gakking, and screeching. Assuming you have that many neighbors close by.
 
It's ok if there is some noise but I can't have something that's super disruptive.
