Layer breed cockerel advice

Have a newbie question. I want to process my layer breed (not dual purpose) cockerels at around 6-8 weeks and am wondering if they will be like quail at that stage? I know they won't be anything like what I'm used to chicken-wise from the grocery but I had quail a long time ago at a restaurant and it was super small and I thought pretty scant on the meat haha so I was thinking maybe these guys will be like that in build but taste like chicken? Or maybe I'm way off and they will be more like sad scrawny quail equivalent of a Vogue model? I want to do the deed before any crowing or male shenanigans start.
 
I eat my layer breed cockerels and they have barely any breast meat. The thighs and legs are fuller but still pretty scrawny. Tastes delicious though and might as well eat the ones you don't need.
